What is parsley root?!

Parsley Root is to Parsley as Celeriac is to Celery.

Another type of parsley is grown as a root vegetable, as with hamburg root parsley. This type of parsley produces much thicker roots than types cultivated for their leaves. Although little known in Britain and the United States, root parsley is very common in Central and Eastern European cuisine, used in soups and stews.

This is going to be really great if we can get it to grow, it is notoriously difficult, because you just can’t buy it in this country! I think we have to wait for the weather to be warm to even start attempting germination, this is going to be a challenge to get to grow and an experiment in taste. If it works, and it’s good, it’ll be a great addition for the future. We’ll have to find some recipes!
